New Year, Again!

Hey there! We Made it!!

Okay, so 2016 was a challenging year in many areas of our modern lives. Besides the loss of too many of our iconic pop culture hero's, we had, well.....one of the most controversial elections in ages. But, I am not here to get into all that now. There will always be challenging times in our lives, it's how we preservere that makes all the difference in the world. Being the optimist that I am, I usually choose to turn "downs" into "ups" with a little bit of.......you guessed it.......Food, Fitness, and FUN!

One of the things that I am doing in 2017 is to re-share some of my most popular posts of 2016. Why? There's a TON of info coming to us each and every day and I want to be sure you didn't miss these popular posts full of great info!

 

Let's start with yummy, yummy food!

This is one of my all-time FAVORITE recipes. And, according to statistics, it's one of my followers' favorites, too!! This Facebook post last fall received a lot of attention. Maybe some of you even made it yourself? "A favorite year around recipe but also perfect for fall!!"

Sweet Potato Kitchari:

Kitchari is considered the “ideal” meal in Ayurveda because it has all 6 tastes (when made like the following recipe). Having all 6 tastes will leave you more satisfied so you’re bound to have less cravings.

Plus, every bite is nutrient dense: packed full of ample fiber and protein!

Ingredients: 4 cups warm water ½ cup red lentils ¼ cup white basmati rice or quinoa 1 medium sweet potato, with skin on 1-3 tsp Ghee or coconut oil ½-1 tsp sea salt 2 tsp Shaktiveda Memorable Journey Spice. I sell this or try ¼ tsp of the following: Cumin, Cinnamon, Hing, Turmeric, Oregano, Fennel. Hing is found on-line or in Indian stores (gives garlic/onion flavor AND helps with digestion of lentils) 2-4 Tbs shredded unsweetened coconut ¼ cup of golden raisins 5-10 leaves of kale, cut up Optional spices: pepper, red peppers, ginger, etc. Cilantro Lime pieces

Directions: Turn pot on medium/low. Rinse the lentils and rice or quinoa and set aside. Add ghee and memorable journey spice to the pan and sauté for a couple of minutes. Add in lentils/rice mixture and stir gently till they’re coated with the spice. Add 2 cups of warm water ( warm it in my tea kettle so the kitchari cooks faster), and simmer on low. Check often and add up to 2 more cups of water as needed. Add in sea salt and any additional spices you want. Chop the sweet potato in 1 inch chunks and add to the pot, continue simmering with a lid (check and stir often). Make sure there is more liquid vs too little. When it’s about done add: coconut, raisins and chopped up kale (it will be stuffed). Set aside and let the kale start to wilt. Let sit for 10 min. Stir it all together and serve with cilantro on top and squeeze ample lime. Enjoy!

TIP: Add any seasonal veggies you want. Also great with spinach instead of kale! Keep this your base Kitchari and just mix up the veggies!

* Remember to practice Conscious Eating and your body will know how much to eat and when to stop.
